The Parador Hotel in Chinchon - Parador de Chinchon
The four star Parador de Chinchon was once the Augustinian Convent of St Mary of Paradise which was founded by the Lords of Chinchón in the seventeenth century. It is located in the old quarter of Chinchon and forms part of the central Plaza Mayor which is full of bars and restaurants, but is closed on Saturdays to hold a bullfight with spectators watching from the surrounding galleries. The Parador de Chinchon is surrounded by cypress trees, rose bushes, a fountain and cloisters surrounding an outdoor swimming pool.
This parador is Renaissance style with wall tapestries, large windows and vaults and Castilian traditional furniture. The building was extensively restored and finally opened as a Parador in 1982. When the building was converted the old cloisters were enclosed in glass looking on to a courtyard with a fountain, roses and privets.
The quiet and spacious bedrooms overlook the gardens. There are 36 twin bedded rooms and 2 suites which have a private bathroom, telephone, satellite television, safe, air conditioning and a mini bar.
The restaurant is decorated with old Spanish tiles and offers local cuisine including 'sopa de ajo' (garlic soup), suckling pig and roast lamb and the typical 'cocido madrileño' (Madrid-style garbanzo bean stew).
When not being used for bullfights, Plaza Grand is dominated by the parish church where the brother of Goya was the Parish Priest. It is believed that the altar was decorated by the great artist. It is full of pavement cafes where many people drink the locally produce aniseed aperitif and Felipe V was proclaimed King of Spain there at the end of the War of the Spanish Succession.
